The Colonnade, Seabourn's more laid-back indoor/outdoor dining alternative, offers a versatile experience. Guests can enjoy open-kitchen setups, lavish breakfast and lunch buffets, and themed bistro-style dinners with nightly table service. The dinners showcase Chef Thomas Keller's influence, featuring family-style servings of classic comfort dishes like Clam Bake and BBQ Ribs, paying homage to his American childhood. Reservations for the Chef Keller-influenced menu at The Colonnade can be made onboard, promising a relaxed and communal dining experience with a touch of fun and togetherness.

In the evenings, Earth & Ocean chefs on Seabourn ships craft a diverse and imaginative array of fresh, inventive dishes. This sophisticated menu celebrates eclectic traditional flavours from around the world, offering guests a distinctive dining experience under the stars. The relaxed setting enhances the overall ambiance, providing a unique and memorable culinary journey on board.

The Grill by Thomas Keller

The Grill by Thomas Keller is an exclusive culinary experience for Seabourn guests, designed by Chef Thomas Keller. In this elegant dining room, guests enjoy table-side preparations of classics like Caesar salad and ice cream sundaes, along with steakhouse favourites such as Lobster Thermidor and creamed spinach, all presented a la carte. The menu highlights the freshest products from artisan purveyors, and a curated cocktail program and wine list complement the offerings. For booked guests, dining reservations for The Grill by Thomas Keller can be requested online prior to sailing, with online reservations recommended due to high demand. Reservations can also be made on board, with one reservation permitted per voyage.

Seabourn is delighted to provide a diverse menu available 24/7 for suite service. Guests can enjoy the flexibility of ordering meals in their suite, with the option to select dishes from The Restaurant menu for a course-by-course dining experience, either within the suite or on the veranda.

Exclusive to The Patio, Chef Keller introduces the signature Napa burger and an artisanal hot dog, playfully named the Yountwurst, paying homage to the hometown of renowned establishments like The French Laundry, Ad Hoc, and the original Bouchon and Bouchon Bakery.

Guests can engage with onboard officers, the expedition team, and fellow passengers in this open and comfortable environment. The Guest Services staff, highly trained to assist, provide concierge services, including ship information, special service requests, and travel information. Seabourn Square also offers freshly made pastries and on-the-go breakfast items in the morning, light sandwiches and desserts later in the day, and artisanal gelati made onboard. The adjoining library provides a diverse selection of books, covering subjects like adventure and expeditions. Guests can stay updated with global news through printed newspapers and tablets featuring the Press Reader news application.

Chef Anton Egger

Chef Anton "Tony" Egger, hailing from a family of Austrian restaurateurs, embraced a farm-to-table ethic from a young age. After earning a bachelor's degree in Culinary Arts in Salzburg, Austria, he worked in prestigious establishments across Austria, Switzerland, France, and Asia. Chef Egger collaborated with the cruise industry through his consulting firm CULPLUS.COM, opening restaurants in Singapore and Bangkok, designing culinary concepts and training programs in Asia and Europe. His culinary expertise led him to participate in events worldwide alongside renowned Michelin-starred chefs.
